I got hurt late last year and was out of work for 3 months. During this period, I got to dig into interests I didn’t have time for due to work and my social life. Baking is one of those interests, and I wanted a type of cookie that didn’t raise my blood sugar and had fiber/protein to combat the sugar spike.
These cookies are vegan and have no oil. They can be made gluten-free, but they weren’t in this recipe. However, as I did in this video, other healthy additions such as psyllium husk, wheat germ, and flaxseed meal can be added.
Why no oil? Why vegan? I did so to avoid including any cholesterol or excess fat in the cookies. The measurements for the ingredients in the video are not set in stone and can be used as a guide.
