Lately, I’ve been baking a  vegan, gluten-free loaf  with a bread machine, and it’s surprisingly simple. My bread machine is the  Cuisinart CBK-110 Bread Maker, which makes small, warm loaves with minimal effort. Just  add ingredients, choose the program, and the machine handles everything. It started as a simple “waste less” idea, and it turned into one of my favorite homemade snacks. Here’s how I turn leftover apple cores into chewy, naturally sweet dehydrated apple crackers. Why I Save My Apple Cores Whenever I eat apples, I set the cores aside and store them in the freezer. Chocolate Chip Raisin Cookies Made from Beans-Vegan, No Oil

  YouTube Video I got hurt late last year and was out of work for 3 months.  During this period, I got to dig into interests I didn’t have time for due to work and my social life.  Baking is one of those interests, and I wanted a type of cookie that didn’t raise my blood sugar and had fiber/protein to combat the sugar spike. These cookies are vegan and have no oil.  They can be made gluten-free, but they weren’t in this recipe.  However, as I did in this video, other healthy additions such as psyllium husk, wheat germ, and flaxseed meal can be added.  Why no oil?  Why vegan? I did so to avoid including any cholesterol or excess fat in the cookies. The measurements for the ingredients in the video are not set in stone and can be used as a guide. Will you try this recipe? YouTube video I discovered food dehydration when I moved into my first apartment years ago. This method of food prep was one of the many things I was excited to try with this newfound freedom of living alone. Kayaking, buying a solar panel for my window, and building a bicycle trailer were several other goals at the time. Why dehydration? It's a method of preserving food so it does not go bad in the fridge, and helps save money.  During that time I'd come to use two different dehydrators, but I wasn't crazy about them. Once, I tried making jerky in an Excalibur machine and got sick. My fault, no doubt. I gave the appliance to a friend thereafter. The second Nesco dehydrator worked fine, but I found it took up too much space and wasn't using it much, so I sold it on eBay. This happened 10-15 years ago.
